Love Food with Fennel
Fennel Potato Gratin
Ingredients
- 500 g potatoes
- 750 g fennel
- 1 onion
- 25 g butter
- 50 ml vegetable stock
- 100 ml heavy sour cream
- salt
- pepper
- 400 g hackled tomatoes
- 200 g raclette in slices
- 25 g pine nuts
Preparation
Peel the fennel. Use some green stems later for decoration. Cut the fennel in half and slit the halves.
Peel the potatoes und cut them in finger-thick slices. Peel the onion and hackle it.
Melt the butter in a pan. Steam the onion in it. Add the fennel and steam it for 5 minutes. Add the potatoes, the vegetable stock and the heavy sour cream. Season it with salt and pepper and cook it for 10 minutes.
In the meantime hackle half of the fennel stems. Add it to the vegetables at the end of cooking time. Season it with pepper and salt. Put it in an oiled gratin dish.
Spread the slices of raclette over the gratin. Strew the pine nuts over it. Bake the gratin in a stove at 200 grad celsius for 25 minutes.
Decorate the gratin with the green stems of fennel before you serve it.
